Tasty Lentil, Celery & Sage Nut Roast
I wanted to create a new nut loaf to add some variety to my classic nut roast. It was a big hit at the winter solstice retreat. Great for any vegetarian visiting over the Christmas season (or anytime!!)
Ingredients
Oil
1 Onion
2-3 Cloves of Garlic
4 big sticks of celery
Can of brown lentils
2 tbsp nutritional yeast
100g ground almonds
A shake a sunflower seeds
Sesame seeds
Salt
Pepper
A splash of gluten free soy/tamari sauce
Fresh sage (or herb of choice)
2 eggs
Knob of butter to grease pan (or oil if making it dairy free)
Preparation time 30 mins approx
Cooking time - 50-60 minutes 180* c (fan oven)
Warm the oil in a pan. Dice the onion and cook until softened. Then add the finely chopped garlic.
Dice the celery into very small pieces and then add to the onion and garlic.
Once the celery has softened, add the ground almond, lentils, sunflower and sesame seeds.
Once everything is mixed together, add all the seasoning including nutritional yeast and sage.
Take off the heat.
Prepare the greaseproof paper/loaf baking tray - greased with either butter or oil.
Sprinkle some sesame seeds in the bottom of the loaf baking tray.
Add the eggs to your celery/lentil mixture and stir well.
Scoop into your baking tray and once it's even, put a sprinkle of sesame seeds on top.
Bake in the oven for approx. 60 mins until firm and desired colour.
